Louvi - black eyed beans
Louvi
Louvi is one of those foods that, I think, you grow to love. I don't know many children who love this dish. I was in my late 20's early 30's before I started to enjoy it and I think with slight variations you may get your children to eat it!!! Having a good crusty bread with it is the way to go.
Ingredients: 4-6 people
2 cups of dry black eye beans
1 large oniion - finely diced
spinach or silverbeet (a good 3 handfuls, washed and cut into 1 inch thickness)
1 tin crushed tomatoes
½ olive oil
1 large (or 2 medium) Greek green marrow (these are hard to find in shops, usually we grow them but you can substitute with normal zucchini or in my case, I add carrots instead).

Method:
Soak your beans from the night before in a bowl with cold water.
In a large heavy based saucepan, add your pre-soaked beans, onion, olive oil. tinned tomatoes, salt/pepper and carrot (if using instead of marrow/zucchini). Top up with some water to cover the beans approx 1 cm above their level. Cook on medium heat for approx 35-40 minutes till tender, then add your spinach/silverbeet, stir through and turn heat off. The spinach/silverbeet will cook with the residual heat. If you use the marrow or zucchini, cut it into 1 inch thickness and add to the pot about 10 minutes before it finishes its cooking process. Serve with fresh crusty bread.
